Cornpone Recipe

Ask and you shall receive.  Polling states that I need to post a recipe.  This is a very easy recipe for a corn pone, or a poor man's corn souffle.  Not very heart healthy, but it's worth every calorie.

Ingredients:
1 stick unsalted butter, softened
1 package cornbread mix
1 can creamed corn
1 can corn kernels (or 3 ears fresh sweet corn, husked, silked and cut from the cob)
1 8oz. container of sour cream
Salt and pepper to taste

Preparation:
Preheat oven to 350
Mix all ingredients in a large mixing bowl
Pour mixture into oven proof dish (8x8 pyrex, or loaf pans work well)
Bake @ 350 for 25-35 minutes until top is light brown

Enjoy!!

Notes:
The center will not solidify completely and that's what we want.  If you desire a less moist corn pone bake longer at the same temp.  For a looser corn pone cook at the same temp for less time.  I know this recipe is very simple, but you will be amazed (hopefully) at how good this side dish is.  Most of us probably have the majority of the ingredients in the pantry already.  Some feedback on this recipe would be great.  If you add or subtract ingredients let us know as well.
